Outs are the classic way most experts recommend evaluating the strength or weakness of poker hands. For example, if you have an open ended straight (10, 9, 8, 7 for example), then there are 8 potential cards that give you the straight (assuming it's not already on the board!). You can then compute the probability of getting one of those cards in one or two draws (after the river, or after the turn).

The screen below shows you the Outs table. For example, with 8 outs and two cards to go, the chance of getting the straight noted above is about 31%, requiring about 2 to 1 odds in the pot to justify calling a bet.
